In my general experience, play test keys get removed from your steam profile after the test period(s) end and/or the game goes live

Usually no, it's called "playtest" for a reason. Either those keys would be revoked from your account(there'd be a pop-up notification), or they'd turn into public Demo version

definitely not. occasionally game makers will offer a discount on buying the full version or hold a contest for a few copies of the full version though.
